It always amazes me how a few very simple (and budget friendly) ingredients can turn into a very fancy looking and tasting dish with just a little creativity and carefully garnished plates. For this dish for example, I used kohlrabi as the main ingredient, which is a kind of cabbage that is very common (and inexpensive) in German speaking countries. It can be eaten raw or cooked, and has a mild cabbage flavor that works great in salads, hearty stews or as a side dish. I combined it with a sweet yet savory pesto made from cranberries and walnuts and served it on a bed of lambs lettuce. By the way, if you have any leftovers or simply don’t need all the pesto and veggies for serving, use it as a sandwich filling – absolutely delicious! I just love taking salad as a quick lunch to uni – it’s easy to prepare in the morning, you can have a different flavour every day by using different vegetables or fruits to spice things up, and it’s an easy way to make sure you eat enough of your greens. The only thing that gets boring is to eat the same bland sandwich as a side. These cornbread muffins are perfect to jazz up your lunch – they taste a little sweet, have a great nutty flavour and the sage adds a very nice zip to it.  They also freeze very well, just pop a couple of them in your lunchbox in the morning and they will defrost easily till lunchtime. Lambs lettuce with roasted pears

Lambs Lettuce with roasted pears

You need:

  • 40g lambs lettuce
  • 1 pear
  • 2-3 tablespoons of balsamic vinegar
  • 1 tablespoon of honey
  • butter
  • salt
  • pepper
  • some walnuts

roasting peersWash the lambs lettuce and arrange it on a plate or in a small bowl. Cut the pear in bite-sized slices. Heat some butter in a small pan and gently roast the pear for about 3-5 minutes.

Then deglaze with the baslamic vinegar, take the pear slices out of the pan (not the vinegar!) and place them on the lambs lettuce. Now add the honey to the balsamic vinegar and season with some salt and pepper. Gently heat the dressing until it gets a creamy texture. Pour it over the salad and top it with some walnuts. Serve with fresh bread.

Chicory salad with orange1

You need:

  • 1 chicory
  • 1 orange
  • 1 tablespoon of walnut
  • 1 tablespoon of blue cheese
  • 1 tablespoon of walnut oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of honey
  • salt
  • pepper

Wash the chicory and cut the leaves into bite sized pieces. Peel the orange and cut it also in small pieces. Mix a dressing from vinegar, honey and oil and season to taste with salt and pepper. Now mix the chicory, orange and walnuts and top with the blue cheese. Sprinkle the dressing over the salad and serve it with some fresh bread.

Pear-carpaccio with walnuts and parmesan

You need:

  • 2 small pears
  • 2 tablespoons of parmesan (in small slices)
  • 1 tablespoon of walnuts
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of walnut oil of mild vegetable oil
  • 1 teaspoon of lemon juice
  • 1 teaspoon of honey
  • salt
  • pepper

Wash the pears and cut it into slim slices. Arrange them on a plate and top it with the parmesan cheese. Mix the oil, vinegar, lemon juice and honey in a small cup and season with salt and pepper. Drizzle the dressing on the pears and the parmesan and crumble the walnuts on top. Serve with fresh baguette.
