Easy three-ingredient banana oatmeal cookies

Is there anything like healthy cookies? I don’t really think so, but I would say that these are pretty close! And the best part is, that there is a good chance that you already hve all the ingredients in your pantry. With the not-so-secret ingredient ‘ripe bananas’  you are able to make delicous oatmeal raising cookies with no added fat or sugar! Which of course doesn’t mean that the cookies are actually sugar free since both bananas and raisins contain relativley high amounts of fruit sugar. But still, compared to other cookie recipes that often use a lot of fat and sugar, these cookies are a much more health-friendly alternative.

If you don’t like raisins, feel free to use any other kind of dried fruits. You could of course also add little extras like chocolate chips, though remember that these contain a lot of sugar and fat! Feel free to experiment with this recipe – you can use whatever spices, nuts or dried fruits you have in your kitchen! Since there are now raw eggs or other potentially problematic ingredients in the dough, this recipe is also perfect for baking with children – if they end up eating some of the dough raw, it’s basically nothing different than rich banana oatmeal.

Below, I have given the measurements for the batter from one banana – if you are using more, simply multiply the measurements by the number of bananas you use. Continue reading

Apple cinnamon streusel cake with raisins and almond flakes

Ok, posting a admittedly not very guilt-free cake recipe shortly after New Year’s eve is probably not very supportive of your resolutions towards healthy food (if you made any), but this one is just too delicious to keep from you. Besides, you don’t have to bake it right now, do you? And there’s loads of fruit in it! And, ok, as in every streusel cake quite a bit of fat, but sometimes you just have to reward yourself for your amazing restraint regarding chocolate. (Self-deception? Me? Never…).

This recipe is calculated for a 23 cm diameter springform tin, and when my father and his girlfriend came over to my place for a ‘post Christmas tea’ the three of us managed to polish off half the cake – it’s seriously this good! Continue reading

Chicory pear salad with raisins

Chicory pear raisin salad wth cashew nuts

You need:

  • 1 chicory
  • 1 pear
  • 1 tablespoon of raisins
  • 1 tablespoon of cashew nuts
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of walnut oil
  • 1 teaspoon of honey
  • salt
  • pepper

Wash the chicory and cut the leaves in bit-sized pieces. Chop the pear in cubes and add it to the chicory. Mix a dressing from the vinegar, oil, lemon juice and honey and season to taste with salt and pepper. Pour the dressing over the salad and top with raisins and cashew nuts. Serve with some fresh bread.

Rice-salad with raisins

Rice-salad with sultanins

You need:

  • 50g rice (basmati or other)
  • 1 small red ball pepper
  • 1 small onion
  • 2 tablespoons of cashew nuts
  • 2 tablespoons of raisins
  • 2 tablespoons of soya sauce
  • 2 tablespoons of lemon juice
  • 1 tablespoon of walnut oil
  • salt

Cook the rise and let it cool down. Meanwhile, chop the ball pepper in bite-sized pieces and the onion in small cubes. Mix a dressing from the soya sauce, lemon juice and oil. When the rice is cold, jumble all ingredients and season to taste with salt and soya sauce. Leave the salad in the fridge for at least 2 hours before serving.
