Chicory pear salad with raisins

Chicory pear raisin salad wth cashew nuts

You need:

  • 1 chicory
  • 1 pear
  • 1 tablespoon of raisins
  • 1 tablespoon of cashew nuts
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of walnut oil
  • 1 teaspoon of honey
  • salt
  • pepper

Wash the chicory and cut the leaves in bit-sized pieces. Chop the pear in cubes and add it to the chicory. Mix a dressing from the vinegar, oil, lemon juice and honey and season to taste with salt and pepper. Pour the dressing over the salad and top with raisins and cashew nuts. Serve with some fresh bread.

Lambs lettuce with roasted pears

Lambs Lettuce with roasted pears

You need:

  • 40g lambs lettuce
  • 1 pear
  • 2-3 tablespoons of balsamic vinegar
  • 1 tablespoon of honey
  • butter
  • salt
  • pepper
  • some walnuts

roasting peersWash the lambs lettuce and arrange it on a plate or in a small bowl. Cut the pear in bite-sized slices. Heat some butter in a small pan and gently roast the pear for about 3-5 minutes.

Then deglaze with the baslamic vinegar, take the pear slices out of the pan (not the vinegar!) and place them on the lambs lettuce. Now add the honey to the balsamic vinegar and season with some salt and pepper. Gently heat the dressing until it gets a creamy texture. Pour it over the salad and top it with some walnuts. Serve with fresh bread.

pear-carpaccio with walnuts and parmesan

You need:

  • 2 small pears
  • 2 tablespoons of parmesan (in small slices)
  • 1 tablespoon of walnuts
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of walnut oil of mild vegetable oil
  • 1 teaspoon of lemon juice
  • 1 teaspoon of honey
  • salt
  • pepper

Wash the pears and cut it into slim slices. Arrange them on a plate and top it with the parmesan cheese. Mix the oil, vinegar, lemon juice and honey in a small cup and season with salt and pepper. Drizzle the dressing on the pears and the parmesan and crumble the walnuts on top. Serve with fresh baguette.

Spinach-pear-salad with balsamic dressing

Spinach-pear-salad

You need:

  • 1 small bowl of young spinach
  • 1 small pear
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of mild olive oil
  • 1 tablespoon of gorgonzola
  • walnuts
  • honey
  • garlic
  • salt

Wash the spinach and  cut bigger leaves in half. Mix the vinegar, oil and a little honey  with garlic and salt. Arrange the spinach on a plate or in a bowl and mix it with some of the dressing. Slit the pear and place it on the spinach. Top it with the gorgonzola and some walnuts and sprinkle with the rest of the dressing. Serve with some fresh bread.
