There’s nothing better in the first cold days of winter than a hearty soup to warm you up. And even better is a soup that is hot and sweet at once. This lovely soup was made from sweet potatoes and a little blood orange juice which adds amazing flavor to it. If you are not sure if you like ‘sweet’ soups, use half sweet and half regular potatoes – this will make the soup more hearty. By the way: This also makes an amazing starter for a festive dinner!
You need:
- 1 sweet potato
- 1 small onion
- 1 clove of garlic
- 600 ml vegetable stock
- 100 ml blood orange juice
- 2 tablespoons lemon juice
- 1/2 teaspoon red pepper flakes
- 1 pinch of garam masala
- salt
- vegetable oil
Peal the vegetables and cut into chunks. Heat some vegetable oil in a medium sized pot and gently fry the onion, garlic and sweet potato for three to five minutes. Add vegetable stock and red pepper flakes. Bring to a boil and simmer for 20 minutes. Add blood orange juice and blend until smooth. Season to taste with salt and lemon juice. Enjoy!
