Apple Sauce with spices

This recipe is perfect if you bought to many apples and need something to use them up without baking tons of apple pie. You can enjoy apple sauce as a small desert, combine it with natural joghurt, ice cream  or pancakes or use it as a filling for cakes and muffins – there are plenty of options. Just make sure you use really ripe apples!

You need:

  • 4 ripe apples
  • 80ml water
  • 1 tablespoon of lemon juice
  • sugar or honey to taste
  • 1 cinnamon stick
  • 3 cloves
  • 2 allspice berries
  • a pinch of aniseed

Wash and peel the apples, remove the core and cut the apples in small dices. Place the apples with the water and spices in a pot and bring to a boil. Simmer for about 10 minutes until the apples are soft. Remove the spices and add some sugar or honey. Depending on how you like the texture of the apple sauce, you can now either mash the apples or blend them – I personally prefere mashing since it leaves some chewy bits in it, but do whatever works for you. Sweeten some more if  necessary and enjoy either warm or cold.

Note: If you fill the hot apple sauce in clean preserving jars, you can store it in the basement for up to a couple of months.
