Couscous with green beans and joghurt lime sauce

I’ve heard a lot of people say that they don’t really know what to do with couscous – or even how to cook it. Though, it is quick and easy to make and you can use it in many delicious dishes. Just like this one: It combines couscous with spicy curry, fresh green beans and ball peppers with a sauce from joghurt and lime. And believe me, preparing the couscous is the easiest and quickest part of it! 😉 

You need:

  • 60g couscous
  • 120-150ml water
  • 100g green beans
  • 1/2 red ball pepper
  • 1/2 red chili pepper
  • 100g natural joghurt
  • 1-2 tablespoons of lime juice
  • dried mint
  • curry powder
  • vegetable oil
  • salt

Clean the beans and the peppers. Cut the beans and the ball pepper in bite-sized pieces and finely chop the chili pepper. Heat some oil in a pan and gently roast the chili pepper for a couple of minutes, then add some curry powder and the green beans and fry all for 10 minutes. Now add the red ball pepper and fry for another 5 minutes. Season to taste with salt and curry.

Meanwhile, place the couscous with some salt and curry in a small bowl, bring the water to boil (you can just use a kettle and measure the amount of water you need afterwards) and pour it over the couscous. Place a lit on the bowl and leave it for about 7 minutes, in this time, the couscous should absorb all the water. Add the couscous to the fried vegetables and roast the dish for another five minutes. Mix the joghurt and the lime juice, add some dried mint and season with salt. Spoon the sauce over the couscous and vegetables before serving.
