Blueberry walnut salad with feta

I have to admit, I am not a big fan of plain lettuce salads – I always add cucumbers or tomatoes or ball pepper or mushrooms or  – whatever I find in my fridge really. But berries are also a great way to jazz up some plain lettuce. This recipe combines lettuce with blueberries, walnuts and a topping of feta cheese. 

You need:

  • 40g mixed leaves lettuce
  • 40g feta cheese
  • 1 handful of blueberries
  • 2 tablespoons of walnuts
  • 1 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of honey
  • salt
  • pepper

Wash the lettuce and the blueberries and gently dry both with kitchen paper. Whisk the olive oil, lemon juice and honey to a smooth dressing and season to taste with salt and pepper. Mix half the dressing with the lettuce, blueberries and walnuts in a small bowl. Crumble the feta on top and sprinkle with the remaining dressing. Enjoy the salad as a starter or serve along with fresh bread as a main dish.
