Pancake with spinach feta filling

Who says pancakes always have to come along with something sweet? They can also be a delicious dish with a hearty filling. This one combines spinach and feta cheese in a savoury blend that goes along perfectly with the mild pancake. Non-vegetarians can try to add some cooked ham as well!

You need: 

  • 1 egg
  • 2 tablespoons of wheat flour
  • 1 tablespoon of milk
  • 70g fresh spinach
  • 40g feta
  • fresh basil
  • salt
  • pepper
  • vegetable oil

Whisk a pancake dough from the egg, flour and milk, season with some salt and let it rest in the fridge for about 30 minutes before proceeding.

Heat some oil in a pan and gently fry  the spinach until it is soft. Add some fresh basil and season with salt and pepper. Take the spinach out of the pan and mix it with the feta in a small bowl. Now you need to be a little quick: Bake a pancake from the dough and when it’s done, arrange the filling on one side of it (don’t take the pancake out of the pan yet!). Roll the pancake up and leave it in the pan for a couple of minutes to re-heat the filling. Enjoy!
