If you don’t want to miss the taste of curry on a hot summer day (or, rather a warm spring day), why not try to make a fruity salad with a light curry dressing? Ready to eat in a couple of minutes, and sooooo delicious!
- 1 sweet apple (I think Gala works best, but try other ones if you want!)
- 1 red ball pepper
- 2 tablespoons of natural joghurt
- 1 tablespoon of lemon juice
- 1/2 teaspoon of curry powder
Cut the apple and the ball pepper in bite-sized pieces. Mix a dressing from the joghurt and the lemon juice and season to taste with curry and salt. Serve with some cream crackers or fresh bread.
Note: This makes a quite big bowl for one person, so you could also split this in two halves and serve as a side dish with a bigger meal or as a starter.
