Yesterday was my 24th birthday, so I decided to make some muffins for my coursemates at uni. I had a little back luck this time because for some reason the filling did not want to stay inside the muffins. Since I made those muffins several times back home in Germany without this problem, I blame the oven in my hall for this. 😉
You need (for 18 muffins):
For the dough:
- 500g wheat flour
- 250ml (orange) lemonade
- 200ml yoghurt
- 150g sugar
- 150g butter
- 2 eggs
- 5 tablespoons of baking powder
- 2 teaspoons of vanilla flavouring (comes in a little plastic bottle)
- a pinch of salt
For the filling:
- 200g cream cheese
- 75g icing sugar
- 1 tablespoon of (orange) lemonade
For the topping:
- 100-150g icing sugar
- 3-5 tablespoons of lemon juice
- some sweets or sugar pearls
For the dough, first mix the eggs, sugar and butter and stir until creamy. Then add the vanilla flavouring, yoghurt and finally the lemonade. In a smaller bowl, mix the backing powder and a pinch of salt with the flour. Sift the flour into the bowl with the dough and stir it well.
For the filling, simply mix the three ingredients until you get a smooth cream.
Now place a paper muffin case in every hole of your muffin tray and start heating the oven. Fill every muffin case up to one third with the dough, then place a teaspoon of the filling on top. Cover it with 1-2 tablespoons of dough (depends a bit on how big the wholes in your tray are). Put the tray in the oven and bake the muffins for about 25 minutes at 180°C.
When the muffins are done, take the tray out of the oven and the muffins out of the tray (use a fork to gently lift the muffin up if it is sticking at the tray). Place the muffins on a grate and let them cool down before your start with the decoration.
For the topping, mix the icing sugar with the lemon juice and brush the muffins with the icing. Immediately place some sweets on top. Wait until the icing has dried, and then – enjoy!
